Started my February Freezer Cooking a day early! This is what I made today after hitting CVS, Rite- Aid, and Shaws.
2 Chicken Ziti (Ziplock bag )
2 Beef Taco’s (Ziplock Bag)
2 Chicken Stuffing Casserole
Cooked my chicken up for Franks Buffalo Chicken Dip (whoops, not in the picture)
2 Shepard’s Pie
I completed all this in just under 4 hours and only used 2 pots for cooking plus my baking dishes used to freeze them in, which made for an easier clean up. One of the great things about freezer cooking……you only make a big mess in your kitchen once a month.
I started the plan with cooking up all my hamburg. While it was cooking, I peeled the potatoes ($0.99 a bag 2 weeks ago). As the burger was finishing up, the potatoes went in the pot. Added the cream of chicken soup to 3/4 the hamburg and put it all into two baking dishes.
With the rest of the meat I added taco seasoning and diced the yellow peppers up. Cooked them and placed them into a ziplock freezer bag along with the hamburger, 2 beef taco’s done…check!
Next, washed out the pan and cooked up the chicken. The potatoes were done so I mashed them up, added corn and topped with whipped potatoes! 2 Shepards pie, done….check. Rinsed the pot and filled up with water for the ziti. Phew…are you tired listening to me yet? Cause I’m running low on energy by now. Almost done though.
Chicken and ziti are all cooked up. Used half of each and layered the chicken on the bottom of 2 pans, added 2 cans of cream of chicken soup to the ziti, mixed it up and poured it on top of the chicken. Then layered with string beans, mozzarella (or cheddar) cheese, and topped with chicken stuffing. 2 Chicken Casseroles….Done. Took the rest of the chicken and made the buffalo dip.
Lastly….with the other half of the chicken and Ziti: Added them both equally into 2 large gallon ziplock bags and threw in a bag of mixed frozen green giant vegetables. Unfortunately I realized that I used all my cream cheese up, so my plan is to make up an Alfredo sauce the night we eat one. Chicken Ziti…..done,….. check, check and checking out for the night! Oh, and I did clean up my kitchen…although I said to my husband “I’m just going to mess it up again in the morning, but at least it’ll be clean when I wake up!
Tomorrow’s Plan: Running my 3.2 miles in the morning then it’s “Mostly Baking Day”!
Cook Hot sausage and freeze for spaghetti (Using with all the Ragu I just got at CVS today).

*Had a few ask how much hamburg, ziti, and chicken I used: 4 pounds of burger, 2 boxes of ziti, and 3 1/2 pounds of chicken.

WOW! You did great! I really love OAMC and have only been doing it for about 3 months now. I don’t know why I haven’t done it before now. And great job on the running! My friends and I are going to be running in my first 5K at the end of the month. I’m scared to death and figure it will take me an hour to complete. That’s my goal anyway
