OAMC – Once A Month Cooking AKA Freezer Cooking!

Here is the beginning of my OMAC journey today

- Started the dough for Bread Machine rolls-

Here is my recipe: Must place in this order.

1 egg

3 cups of flour

3 tbs sugar

2 1/4 tsp yeast

1/2 tsp baking soda

1 cup water (warm)

1 1/2 tsp salt

Added garlic, onion powder, and chives to the first batch for a little more  flavor – great to dip in olive oil and pepper!

While the bread machine was doing it’s thing I boiled 8 full chicken breasts and 4 pounds of beef.

While the chicken and beef simmered I peeled and cut my vegetables for the turkey soup. Making good use of the boiled chicken broth, I hate to throw anything out!

The beef was cooked and then I put together a Shepard Pies and 2 taco mixes (Ziplock baggies).  Next I fried up my breakfast sausage and then started my eggs  for the breakfast burritos. These are really easy to make. This is the first time my family will be trying them so I’m only making 12 this month to test the taste buds.

I used 8 eggs, 2 pounds of breakfast sausage and layered them with sharp cheese on top of a Tortilla.

Chicken Casserole

Ingredients: 2 cooked chicken breast

1 cup rice

1 can cream of chicken soup

3/4 cup white cooking wine ( or chicken broth)

1 1/2 cup of mozzarella cheese

1 package stuffing

Easy to make and freezes great: 2 cooked chicken breast sliced and layered on the bottom of a glass pan. Add rice and seasoning to your liking. Mix cream of chicken soup and white cooking wine together, top with mozzarella cheese. Make your stuffing according to directions and then add as the top layer. When you are ready to cook, defrost in fridge before placing in oven at 375 degrees for 30 minutes.

Here is my finished turkey soup (had turkey in my freezer so I used that up instead of the chicken).

Changed up the Chicken Puffs Recipe from All Recipes a little. Used mini muffin pan instead and cheated slightly on the fresh garlic and onion (used garlic and onion powder instead).  They are absolutely delicious, I did a taste test as you’ll see in the bottom picture (one is missing from the muffin tin)!

Had some filling from the puffs left over so I placed them in mini tortilla’s along with some sharp cheese.

Here are my first batch of rolls – second batch is in the bread machine!

48 Bread Machine Rolls

12 Breakfast Burritos

2 Chicken Casseroles

Large pot of turkey soup (24 cups)

24 Chicken Pastry Puffs

10 Chicken Tortilla Puffs

1 X-Large Lasagna Pan

1 Shepards Pie

2 Taco Mixes

(beef/green peppers/Taco Seasoning I’ll just have to add the tortilla and toppings)

2   Chicken Alfredo with veggies and pasta (1 gallon Ziplock)

Here is my plan for tomorrow: Not a lot left – thank goodness!

Cinnamon Bread Machine rolls

Peanut Butter Cookies (pre-made mix)

Note: Last month I didn’t get around to making the bread machine cinnamon rolls from moneysavingmom, and I am so looking forward to trying them this month!

    Awesome job Kellie, I personally tasted the cinnamon rolls this AM, delivered by the Author Kellie Chasse! LOVED them. I feel this is a great way to save and get ideas for all of your meals.

    So I am wondering what you use to wrap the rolls to keep them from Freezer Burn???

    Hi Charlotte! The trick is to let them fully cool and then put them into a large 1 gallon Ziplock freezer bag. Then use a straw to suck out all the air from the bag ( In my opinion it works just a well as the expensive vacuum seal and it’s a lot cheaper). It looks really funny and sometimes you can get a little light headed when you have a lot :) but it works to help keep the freezer burn away.
